Basil pesto and hemp butter

Pesto au basilic et beurre de chanvre

 

A creamy and slightly grainy pesto, where hemp butter replaces some of the traditionally used nuts. The result: a rich texture and a good dose of healthy fats, ready in just a few minutes, with no cooking required.

Recipe: Basil and Hemp Butter Pesto

Servings: approximately 300 g of pesto | Preparation: 10 min

Ingredients and tools needed

  • A blender or food processor
  • 80 g basil (leaves and stems)
  • 40 to 60 g Parmesan (cheese is always a good variable to adjust according to taste; start with 40 g, then adjust to your liking)
  • 50 g olive oil
  • 2 cloves garlic
  • 200 g raw hemp butter
  • Salt, to taste

Preparation

  1. Peel the garlic cloves, then remove the sprouts.
  2. In the blender, mix all ingredients, except the salt, until a creamy and slightly grainy consistency is obtained.
  3. Add Parmesan and salt to taste.

Can hemp butter be replaced with another nut butter?
Yes, raw sunflower butter or pumpkin butter also work well and each bring a different flavor.

How long does this pesto keep?
Approximately 5 to 7 days in the refrigerator, in an airtight container, with a drizzle of olive oil on top to limit oxidation.

Is this pesto vegan?
Not in its original version, because of the Parmesan. For a vegan version, you can replace it with nutritional yeast, to taste.
