Almond butter, the star of this mushroom recipe

Obtained from dried oilseeds or seeds that are then slowly ground with a stone mill at low temperature, they transform into a creamy, smooth texture with a rich and unique taste. Recipe: Sautéed mushrooms with almond cream

Ingredients
- 1 tbsp olive oil
- 1 red onion, sliced
- 500g mushrooms of choice (button, oyster, shiitake, etc.)
- 1 large tbsp Cru Nature organic raw whole almond butter
- 3 tsp tamari sauce
- 1 tsp agave syrup
- 1 sprig fresh thyme
- 3 tsp sunflower seeds
Instructions
- In a sauté pan, heat olive oil over medium heat.
- Add the onion and mushrooms. Sauté until the mushrooms have released their juice and the water has completely evaporated.
- Remove from heat and stir in the thyme, agave syrup, tamari, and almond butter. Mix gently to coat the mushrooms well, then return to low heat for 3 to 5 minutes without overheating the butter.
- Sprinkle with sunflower seeds just before serving.

Can I substitute almond butter with another nut butter? Yes. Raw cashew butter or tahini also work very well and each adds a slightly different flavor to the sauce.
